Applications:

As named as Fungal α-amylase, alpha amylase powder, is a non-GMO, nonhazardous, food grade and industrial grade enzyme. The use of amylase provides a source of sugar for yeast fermentation. The increased sugars also improve flavor and enhance crust color. Improvement of core structure, as flour standardization, increase the volume of flour products.
